Peach Glazed Grilled Pork Chops with Grilled Vegetables |

Well folks it is officially summer and nothing represents summer more than pool parties, suntan lotion, and food hot off the grill. Here is a recipe that I came up with this month. It's quick and easy and your friends will ask for it again and again. Happy summer and enjoy!
4 pork chops bone in, about 1-1/2 inches thick.1/2 large onion finely minced.1/3 cup finely chopped green onions1 1/2 cups peach preserves2/3 cup strawberry preserves1 cup white wine 1 1/2 cups chicken stockLouisiana hot sauce 2 tablespoons finely minced garlic3 tablespoons all-purpose floursalt pepper1 tablespoon ground sage1/4 cup sugarlemon pepper seasoning.olive oilan assortment of vegetables for grilling such as asparagus, sliced eggplant, sliced red onion sliced squash. just mix and match to your liking 1. preheat grill to medium2. sprinkle louisiana hot sauce on pork chops and seaon with sprinkling of lemon pepper, salt, and pepper.3. prepare vegetables and season with salt and pepper and sprinkle with olive oil.4. grill pork chops until almost done and remove from grill. then brush with 3 tablespoons of peach and strawberry preserves. place back on grill until done. 5. place vegetables on grill and cook until desired doneness.6. in saucepan heat 3 tablespoons olive oil and flour until a light roux develops and flour is cooked through. add minced onion, green onion, and white wine and whisk until sauce is liquified and has no lumps. when mixture boils add the remaining of peach and strawberry preserves, and chicken stock, salt and pepper to taste, sage, garlic, and three splashes of louisiana hot sauce and sugar. continue to cook until mixture is reduced to a gravy consistency. 7. when ready, pour sauce on pork chops and serve with grilled vegetables, and ENJOY!! |
