S o it is summer and here in Arizona the heat is on! During this time of year the last thing i want to be doing is slaving over a hot stove. I like to be with my friends around the pool, and having fun. So here is an easy way to prepare dinner that's done is a flash without all the heat. For this dish I like to buy pre-cooked chicken tenders and just bulk chop them for the salad. These dishes can be made ahead of time and pulled out at the right moment for a get together and they are sure to be a hit!!
Greek Grilled Chicken Salad with Grand Marnier Strawberries. Greek Grilled Chicken Salad 1 (12 ounce) package romaine lettuce, chopped. 2 (6 ounce) packages refrigerated grilled chicken breast streips, coarsely chopped. 2 cups grape tomatoes, halved. 1 small chopped seeded cucumber. 1/2 cup feta cheese ( i like to used reduced fat) 2 tablespoons sliced ripe olives. 1/3 cup thinly sliced red onion. 1/4 teaspoon ground black pepper (or more if you like). 1/3 cup olive oil vinaigrette.juice of 1/2 lemon. Combine first 8 ingredients, toss gently. Combine vinaigrette and lemon juice in a small bowl; stir with a whisk. Pour dressing over lettuce mixture. Serve.Quick Play by Nae~Nae: To seed a cucumber quickly, cut it in half lengthwise and using the tip of a spoon or a melon baller, scoop out the seeds. Grand Marnier Strawberries 1 quart strawberries, sliced. 1/4 cup Grand Marnier (orange-flavored liquer). 2 teaspoons grated orange rind. Whipped cream Combine first 3 ingredients. toss gently. serve with whipped cream. For an elegant effect, I like to serve this in frosted martini glasses. Oh so posh!!! Enjoy! |
